"Some say that the better the fish, the less you should do to it in the kitchen. Never is that truer than with salmon.
When the king salmon that Simply Seafood's Roger Fitzgerald accompanied from the Copper River arrived in Seattle, chef Charles Ramsayer of Ray's Boathouse had a hefty charcoal grill hot and ready to go. The fish were filleted, swiped with some garlic butter, and tossed on the grill. Simple as that. A little oregon pinot noir to sip alongside, some bread and salads, and it was a feast fit for a king (no pun intended). No wonder the Native peoples revere the salmon.
In New York City, chef Keith Bennie of Mad Fish chose to poach his first Copper River king. The light broth was subtly flavored with smoked lobster, smoked pork, cured mushrooms, and shallots. Garnished with sweet corn, spring vegetables, and basil, the dish was a sellout. The earthiness of the ingredients complements the wild kings for a stunningly rich blend of flavors.
Down in Florida, chef Ron Pollack of Fultons' Crab House in Lake Buena Vista near Orlando prepared some of the season's first kings in a wine cure: sea salt, white wine, sugar, herbs, and peppercorns. After 36 hours, the salmon was sliced paper-thin and served as an appetizer, with a simple fresh relish or horseradish sauce alongside."
